Sodium carboxymethyl starch is white or yellow powder, odorless, tasteless, nontoxic, and easy to absorb moisture when heated. Carboxymethyl starch sodium dissolves in water to form colloidal solution, which is stable to light and heat. Insoluble in organic solvents such as ethanol, ether and chloroform. The water solution of this product is stable in alkali, but poor in acid, which produces insoluble free acid and reduces viscosity, so it is not suitable for strongly acidic food. If the aqueous solution is heated above 80ºC for a long time, the viscosity will decrease..
